Christmas Biscotti with Cornish Sea Salt Flakes

Christmas Biscotti with Cornish Sea Salt Flakes

Ingredients

2 eggs
100g caster sugar 250g plain flour
1/2 teaspoon bicarbonate of soda Zest of 1 orange
50g chopped blanched hazelnuts
50g dark chocolate chips
Cornish Sea Salt Flakes
Extra melted chocolate & hazlenuts to decorate

Instructions

  1. Preheat your oven to 160°C fan/ 180°C.
  2. Whisk together the eggs and caster sugar with an electric whisk until light and fluffy.
  3. In a separate bowl, combine the plain flour, bicarbonate of soda, orange zest, chocolate chips, hazelnuts and Cornish Sea Salt Flakes. Gently tip the dry ingredients into the sugary egg mix fold together carefully.
  4. Tip onto a floured surface and shape into a long sausage approximately 3cm thick. Bake in the oven for 30 minutes, then remove and slice.
  5. Return to the oven for a further 15 minutes, flat side up.
  6. Once cooled, dunk or drizzle with chocolate, adding some extra hazelnuts and sea salt flakes.
