Ingredients
45g plain flour45g light brown soft sugar
45g caster sugar
25g cocoa powder
1/2 teaspoon baking powder
40g unsalted butter melted
20g vegetable oil
35g sour cream
1 tablespoon instant coffee
1 medium egg
30g chopped milk chocolate
Cornish Sea Salt Flakes
Vanilla Ice Cream to serve
Instructions
- Combine the melted butter, coffee, oil, sour cream and egg in a bow whisking until combined.
- Then add in the dry ingredients, and a generous pinch of Cornish Sea Salt Flakes. Whisk together then divide the mixture between 2 lightly greased microwave safe mugs.
- Add the chopped chocolate to each mug, stirring briefly to combine.
- Microwave the puddings one at a time for about 1 minute 15 seconds, until risen but still gooey. Top with a scoop of vanilla ice cream, a scrunch of extra sea salt flakes and a grating of chocolate on top.
