Ingredients
1kg potatoes, peeled2 tbsps of veg oil
3 tsps of Cornish Sea Salt Crystals
3 tsps of Cornish Sea Salt Herb Sea Salt
Serving suggestion - Sriracha mayonnaise
6 tbsps of mayonnaise
3 tbsps of Sriracha
Instructions
- Preheat a fan oven to 200c
- Cut the peeled potatoes into wedges and drop them into salted boiling water (we like to use our crystals) and cook until slightly soft.
- TOP TIP* Drain into a colander and let the steam completely disappear before putting them into the oven to get the crispiest wedges!
- Once cooled, toss in the veg oil and Cornish Sea Salt Herb blend and roast in the oven for roughly 40 mins or until golden brown and crispy.
- Remove from the oven and finish with a bit more Cornish mixed herbed Sea Salt.
- For the Sriracha mayonnaise combine the ingredients together and serve.
