Ingredients
1 onion finely diced250g basmati rice
1-2 tablespoons curry paste
Juice of half a lime
600ml vegetable or chicken stock
Cornish Sea Salt 'Roasting Salt'
200g frozen vegetables
2 x packs of raw king prawns (approx 300g)
Chopped spring onions (to serve)
Chopped fresh coriander (to serve)
Instructions
- Heat the oil in a large saucepan then add the onion to soften. Sprinkle in the rice, allowing to cook for a further few minutes.
- Add the curry paste, large pinch of Cornish Sea Salt 'Roasting Salt' and lime juice.
- Stir in the stock and bring to the boil, until covering with a lid and cooking on a low heat until the liquid is absorbed - this will take about 10 minutes.
- Add the frozen vegetables and prawns, stirring through the rice mix.
- Re-cover the pan and cook for another 5 minutes until the prawns are pink and cooked through.
- Serve up with some chopped spring onions, coriander and final sprinkle of Cornish Sea Salt Roasting Salt.
