Prawn and Vegetable Pilau recipe with Cornish Sea Salt Roasting Salt

Ingredients

1 onion finely diced
250g basmati rice
1-2 tablespoons curry paste
Juice of half a lime
600ml vegetable or chicken stock
Cornish Sea Salt 'Roasting Salt'
200g frozen vegetables
2 x packs of raw king prawns (approx 300g)
Chopped spring onions (to serve)
Chopped fresh coriander (to serve)

Instructions

  1. Heat the oil in a large saucepan then add the onion to soften. Sprinkle in the rice, allowing to cook for a further few minutes.
  2. Add the curry paste, large pinch of Cornish Sea Salt 'Roasting Salt' and lime juice.
  3. Stir in the stock and bring to the boil, until covering with a lid and cooking on a low heat until the liquid is absorbed - this will take about 10 minutes.
  4. Add the frozen vegetables and prawns, stirring through the rice mix.
  5. Re-cover the pan and cook for another 5 minutes until the prawns are pink and cooked through.
  6. Serve up with some chopped spring onions, coriander and final sprinkle of Cornish Sea Salt Roasting Salt.
