Ingredients
1.5kg - 2kg beef short rib50g Cornish Sea Salt Fine Flake (or Flakes gently crushed in a pestle & mortar)
15g Origin coffee (ground coffee)
10g demerara sugar
2g cocoa powder
5g smoked paprika
1g cayenne pepper
5g onion powder
2g ground black pepper
2g ground ancho chilli powder
1g ground coriander
2-3 springs fresh rosemary, chopped roughly
Instructions
Combine the dry rub ingredients in a bowl and mix thoroughly.
Coat the beef short rib with the dry rub, ensuring that it is well coated all over.
Slow cook for 4+ hours at 150°C on a BBQ or in the oven. Using a BBQ will hot smoke the beef while it cooks.
Serve with slaw, dirty onions, slow cooked roast potatoes (try cooking these on a tray the BBQ too!).
