Ingredients
6 Vine tomatoes6 large Cornish Strawberries
Juice of 1 lemon
Juice of 1/2 orange
1 tbsp caster sugar
1 clove garlic, minced
50g basil leaves
4 tbsp extra virgin olive oil
Smoked Cornish Sea salt to taste

Method
Slice the tomatoes and strawberries and arrange them on a plate in a flat layer so they soak up the seasoning and dressing evenly.
Rip the basil and place into a pestle and mortar (or food processor) and grind together with the olive oil to create a paste.
Work in the caster sugar, garlic and citrus juices to finish the dressing - adjusting the balance of acidity and sweetness to taste.
Dress the salad with the zesty herb oil and garnish with a handful of small picked basil leaves.
Finish with a generous sprinkling of smoked Cornish Sea Salt flakes.
