Ingredients
1 large ripe banana120g self raising flour
150ml milk of your choice (we've used oat milk)
1 tablespoon golden caster sugar
2 tablespoon vegetable oil plus extra for the frying pan.
Large pinch of Cornish Sea Salt Flakes
Fruit, nuts & maple syrup for topping
Instructions
- Mash the ripe banana in a bowl using the back of a fork. Add in the flour, sugar and salt, stir to combine. Mix in the oil, then gradually add the milk, bit by bit, whisking as you go until you form a thick, smooth batter.
- Heat a little extra oil in medium/hot frying pan. Then carefully spoon in a couple of tablespoons of the pancake mix. This batter makes the most delicious, fluffy american-style pancakes so keep that in mind when you're creating the shape & depth in the pan.
- Cook for a couple of minutes on one side, flip, then fry until golden on the reverse side.
- Serve with extra bananas, berries of your choice, some chopped nuts if you want, maple syrup and an extra sprinkling of Cornish Sea Salt Flakes of course - it gives a delicious contrast to the sweet flavours.
